Peanut Butter Cut Out Cookies

I have been on a mission to create a delicious peanut butter cookie that is somewhat healthy. My latest iteration is not only good, but a fun option because I can make them into cut out shapes for my granddaughter. These cookies are quick and easy to make and can be served plain with a sprinkle of sugar on top or topped with melted chocolate/peanut butter chips. I store mine in the freezer for when I need a little sweet treat!
Makes about 15-20 cookies depending on size of cookie cutter

Ingredients:
Dry
1/2 cup oat flour
1/4 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp (scant) salt
Wet
1/2 cup runny peanut butter (I like this one)
1/4 cup maple syrup
1 tsp vanilla extract
Optional: Demerara sugar for sprinkling over tops or chocolate for drizzle

Instructions:
Pre-heat oven to 350 degrees.
Mix dry ingredients in a small bowl and set aside while you mix the wet ingredients together in a medium sized bowl.
Add the dry ingredients to the wet ingredients and stir until a ball forms. Scoop all the dough from sides of bowl and add to make a smooth ball. (If for some reason your dough is too dry add a tablespoon or two of plant milk.)
Roll out dough in between wax paper until about 1/4 inch thick using a sprinkle of oat flour if needed.
Cut out shapes with cookie cutter and place on a parchment lined baking tray. For the top photo I used a circle biscuit cutter and pricked the tops with a fork for decoration. Optional: Sprinkle over with demerara sugar.
Bake for 9-11 minutes or until browned.
Optional: Melt a tbsp of peanut butter with 1/2 cup of chocolate or peanut butter chips and melt in the microwave. Stir until smooth, then spread or drizzle over the tops of cooled cookies. You could also melt Lily's peanut butter chips and drizzle over the cookies.
