Breakfast Sweet Potato

If you love sweet potatoes and need to mix up your morning fare, I highly recommend these delicious treats. The possibilities of toppings are numerous and flexible.

Ingredients:

  • 1 Baked sweet potato/yam of ANY kind (purple, Hannah, orange, etc.)

  • Berries/Fruit: fresh or frozen

  • 1/2-1 Tbsp. nut butter: almond is great!

  • sprinkle of cinnamon

  • 1/2-1 tbsp. ground flax (for health reasons, omit if you like)

  • Non-dairy unsweetened yogurt (I like Nancy's oat milk yogurt, or Forager's cashew milk yogurt)

  • Granola (homemade or store-bought)

  • Optional toppings: coconut flakes, dried fruit, chia seeds, cocoa nibs, nuts, etc.

Instructions:

  1. Slice your sweet potato down the middle and heat it up in a microwave, oven, or air-fryer until warm to touch (I air-fry mine on 360 about 3-4 minutes).

  2. Drizzle with nut butter of your choice (I usually do almond butter). You can also choose to skip the nut butter and sprinkle with nuts and/or seeds instead--or do both!

  3. Sprinkle with cinnamon and ground flax.

  4. Top with fresh berries/fruit (if using frozen then heat up frozen berries with the potato as pictured below) and yogurt.
